It’s a challenge for every parent to get veggies into our kids one way or another. This is a quick and simple breakfast recipe that we’ve come up with in an effort to use all the tomatoes and zucchini that our garden provides. It’s an ongoing effort to try’n use all these veggies as much as possible (check out how I cope with this in The Veggie War — Why & How to Get Your Kids to Love Vegetables). This breakfast provides lots of healthy value to a busy toddler who needs all the energy they can get.
Zucchini is low in Saturated Fat, and very low in Cholesterol and Sodium. It is also a good source of Thiamin, Niacin and Pantothenic Acid, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese.
Tomato is very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium, Phosphorus and Copper, and a very good source of Vitamin A, Vitamin C, Potassium and Manganese.
Egg is a good source of Protein, Riboflavin, Vitamin B12 and Phosphorus, and a very good source of Selenium.
Cheddar Cheese is a good source of Protein, Calcium and Phosphorus.
Together, they explore the topics of gentle parenting, healthy eating, grateful thinking, yoga bending, nifty hacking, green living, soul searching, and mindfulness practicing.
